  • 2/3 cup Pecans (toasted)
  • 6 oz Baby Spinach (fresh)
  • 3 cups Strawberries (sliced)
  • 1 cup Blackberries
  • 1/3 cup Feta Cheese (crumbled)
  • 1 cup Balsamic Vinegar
  • 1/4 cup Honey (or brown sugar)

Instructions

  1. Prepare the balsamic glaze by simmering balsamic vinegar and honey in a saucepan for about 10 minutes until thickened; let cool.
  2. Preheat your oven to 375°F (190°C) and toast prosciutto on a baking sheet for 6–8 minutes until crispy. Toast pecans separately for 5–7 minutes or until fragrant.
  3. In a large mixing bowl, combine fresh spinach with sliced strawberries, blackberries, toasted pecans, crumbled feta cheese, and crispy prosciutto.
