  • 1/2 cup red bell pepper, diced
  • 1/2 cup celery, diced
  • 1/2 cup green onion, sliced

  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the poached shrimp by boiling water with lemon, garlic, bay leaf, pepper, and salt. Add raw shrimp and cook until pink (3–5 minutes). Transfer to an ice bath.

  3. In a bowl, mix mayonnaise, lemon juice, salt, and pepper for the dressing.
  4. Combine cooled shrimp with vegetables and dill in a large bowl; pour dressing over and toss gently until coated.
  5. Chill for 30 minutes before serving or enjoy immediately.
