  • 10 eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 1/2 cup cooked crumbled bacon or sausage (optional)
  • 1/2 cup chopped turkey (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray a muffin tin generously with non-stick cooking spray.
  3. Chop your chosen vegetables and pre-cook bacon or sausage if using.
  4. In a mixing bowl, whisk together eggs, milk or cream, salt, and pepper until frothy.
  5. Place chopped veggies, meat, and cheese in each muffin tin cavity.
  6. Pour the egg mixture over the fillings until each cavity is about 3/4 full.
  7. Gently stir each cavity with a fork to distribute ingredients.
  8. Bake for 12-18 minutes until set and slightly golden on top.
  9. Allow to cool before removing from the tin.
