  • 4 skinless salmon fillets (6 oz each)
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Lemon wedges

Instructions

  1. Cook spinach in a skillet over medium heat until wilted (2-3 minutes). Drain excess liquid and combine with cream cheese, Parmesan, minced garlic, salt, and pepper in a bowl.
  2. Create pockets in salmon fillets using a sharp knife for stuffing.
  3. Generously fill each pocket with the spinach mixture.
  4. Season the outside of the fillets with a mix of paprika, garlic powder, onion powder, black pepper, and salt.
  5. Sear salmon in olive oil on medium-high heat for about 2-3 minutes per side until crispy.
  6. Transfer to a preheated oven at 350°F (175°C) and bake for 10-12 minutes until cooked through.
  7. Serve garnished with lemon wedges.
