  • 3/4 cup light brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup Greek yogurt
  • 1 1/2 cups fresh blueberries
  • 6 oz cream cheese
  • 3 tablespoons granulated sugar

Instructions

  1. Preheat oven to 425°F and line a muffin pan with paper liners.
  2. Toss half of the blueberries with a tablespoon of flour; set aside.
  3. In a separate bowl, mix dry ingredients (flour, baking powder, salt) and set aside.
  4. Whisk together wet ingredients (egg, sugar, Greek yogurt, oil, vanilla) until smooth.
  5. Combine wet and dry mixtures gently; fold in floured blueberries.
  6. Prepare cream cheese filling by mixing cream cheese, sugar, corn starch, and vanilla until smooth.
  7. Fill muffin liners with batter, add cream cheese filling in the center, top with remaining blueberries and streusel crumbs.
  8. Bake at 350°F for 22–25 minutes until golden.
