  • 1 lb bulk breakfast sausage
  • 1 medium red pepper, chopped
  • 1 small onion, chopped
  • ½ cup chopped green onions
  • 2½ cups shredded cheddar cheese, divided
  • 10 whole flour tortillas
  • 2 cups half-and-half
  • 6 large eggs
  • 1 tablespoon flour
  • Salsa and sour cream for serving

Instructions

  1. In a large pan, cook the sausage, red pepper, and onion until the sausage is browned. Let cool slightly.
  2. In a mixing bowl, combine the cooled sausage mixture with green onions and 2 cups of cheddar cheese.
  3. Use a ⅓-cup measure to scoop filling onto each tortilla and roll tightly. Place seam side down in a greased 9 x 13 inch baking dish.
  4. Whisk together half-and-half, eggs, and flour in another bowl; pour over the rolled tortillas. Cover and refrigerate overnight.
  5. Preheat oven to 350°F (175°C). Bake covered for 30–40 minutes until set; uncover, sprinkle remaining cheese on top, and bake an additional 10 minutes until melted.
