  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 3 cups chicken broth
  • 1 cup half-and-half
  • 3 cups cooked chopped chicken
  • 1 lb smoked or andouille sausage (sliced)
  • 2 cans (15 oz each) red beans (rinsed and drained)
  • 1 can (11 oz) white corn (drained)
  • 2 cans (4 oz each) chopped green chilies
  • 2 Tbsp dried minced onion flakes
  • ¼ tsp garlic powder
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1½ Tbsp Cajun seasoning
  • 2 cups shredded pepper jack cheese

Instructions

  1. In a Dutch oven, melt the butter over medium heat. Stir in flour and cook for about 2 minutes until golden.
  2. Gradually whisk in chicken broth and half-and-half. Bring to a boil, cooking until thickened (about 2 minutes).
  3. Add cooked chicken, sliced sausage, red beans, corn, green chilies, onion flakes, garlic powder, cumin, chili powder, and Cajun seasoning. Stir well.
  4. Reduce heat and let simmer for another 10 to 15 minutes, stirring occasionally.
