  • 3 cups boneless, skinless chicken breasts or thighs
  • 2 jars (30 ounces total) Alfredo sauce
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup shredded Cheddar cheese
  • ½ cup freshly grated Parmesan cheese
  • Olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Cook penne pasta in salted water until just shy of al dente; drain and set aside.
  3. Toss chicken pieces with Italian seasoning, garlic powder, salt, and pepper.
  4. Sauté seasoned chicken and diced onions in olive oil until fully cooked; add minced garlic for the last 30 seconds.
  5. In the prepared baking dish, combine the chicken mixture with drained pasta and Alfredo sauce. Add one cup of mozzarella and Cheddar cheese; mix well.
  6. Top with remaining mozzarella and Parmesan cheese. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10-15 minutes until bubbly.
