  • 12 oz pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts (cut into bite-size pieces)
  • 8 oz mushrooms (sliced)
  • 2 cloves garlic (minced)
  • ½ cup chicken broth
  • ½ cup Marsala wine
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper; sauté until golden brown, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, add mushrooms and cook until tender. Add garlic; cook for another minute.
  4. Pour in chicken broth and Marsala wine; simmer briefly. Stir in heavy cream, Parmesan cheese, and thyme; let thicken for about 5 minutes.
  5. Return chicken to skillet, add cooked pasta, and toss to combine. Season as needed.
  6. Garnish with fresh parsley before serving.
