  • 2 boneless, skinless chicken breasts (16 oz total)
  • 2 large egg whites (or whole eggs)
  • 2/3 cup seasoned whole wheat breadcrumbs
  • 1 tbsp whipped butter
  • Juice of 1 lemon
  • 1/4 cup dry white wine
  • 1/2 cup reduced sodium chicken broth
  • 1 tbsp capers
  • Fresh parsley and lemon slices for garnish

Instructions

  1. Slice the chicken into cutlets and pound them to 1/4-inch thickness. Season with salt and pepper.
  2. Dip each cutlet into beaten egg whites, then coat with breadcrumbs.
  3. Heat a skillet over medium heat. Lightly spray cutlets with olive oil and cook for 2-3 minutes on each side until golden brown.
  4. In the same skillet, melt butter and add lemon juice, white wine, chicken broth, salt, pepper, and reserved lemon halves. Simmer until the sauce reduces by half.
  5. Stir in capers and serve cutlets topped with sauce and garnished with parsley and lemon slices.
