  • 2 cups diced Yukon Gold potatoes

  • 1/2 cup milk of choice
  • Seasonings: black pepper, salt, dried parsley, basil, rosemary

Instructions

  1. Heat olive oil in your cooking vessel over medium heat. Sauté onion and garlic until fragrant.
  2. Add celery and carrots; cook for a few minutes until softened.
  3. Add chicken breasts and pour in chicken broth along with seasonings and potatoes.
  4. If using an instant pot, set to high pressure for 10 minutes; if using the stove, bring to a boil then simmer for about 25-30 minutes.
