  • 1.5 pounds ground chicken or turkey
  • 6 ounces whole milk ricotta
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup sun-dried tomatoes
  • 2 cups freshly grated Parmesan cheese
  • 5 ounces baby spinach
  • 6 bacon strips

Instructions

  1. Preheat oven to 450°F (235°C) and line a baking sheet with parchment paper.
  2. Soak breadcrumbs in milk for 2 minutes.
  3. In a food processor, chop onion, garlic, parsley, and sun-dried tomatoes finely.
  4. In a large bowl, mix the vegetable mixture with ground chicken, soaked breadcrumbs, egg, ricotta, Parmesan cheese, Italian seasoning, and salt until just combined.
  5. Shape into 18–20 meatballs and place on the baking sheet; lightly spray with cooking oil.
  6. Bake for 15–20 minutes until crisp and cooked through.
  7. In a skillet, cook bacon until crispy; remove and melt butter in the same skillet.
  8. Sauté minced garlic, then add heavy cream and whisk in Parmesan cheese until melted; stir in spinach.
  9. Add baked meatballs to the sauce and simmer for an additional 2 minutes.
  10. Serve over pasta or enjoy alone with garnishes of chopped bacon and parsley.
