  • 1 yellow onion
  • 3 ribs celery
  • 4 cloves garlic
  • 1/2 lb. carrots
  • 1.75 lbs. boneless, skinless chicken thighs
  • 1.5 lbs. baby potatoes
  • 2 cups chicken broth
  • 2 cups vegetable broth
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 4 Tbsp all-purpose flour, divided
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried sage
  • 1/4 tsp freshly cracked black pepper
  • 1 Tbsp chopped fresh parsley (optional)

Instructions

  1. Chop onion, celery, garlic, carrots; halve potatoes; cut chicken into pieces and coat with flour.
  2. Brown the chicken in a pot with olive oil and butter; remove once golden.
  3. Sauté onion, celery, garlic, and carrots until soft.
  4. Stir in remaining flour; add browned chicken, potatoes, herbs, and broth.
  5. Simmer covered until potatoes are tender (about 30 minutes).
  6. Taste and adjust seasoning before serving.
