  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • ¼ cup chicken broth
  • 1 tablespoon light brown sugar
  • 1½ tablespoons minced garlic
  • 1 red bell pepper, sliced
  • Green onions, chopped for garnish

Instructions

  1. Cut chicken thighs into bite-sized pieces. In a bowl, mix with cornstarch and dark soy sauce; let marinate for 10 minutes.
  2. Heat oil in a wok over medium-high heat. Fry chicken until golden brown (5-7 minutes). Remove and set aside.
  3. Stir-fry minced garlic and ginger for 30 seconds, then add sliced bell pepper and cook for another 2-3 minutes.
  4. In a bowl, whisk together soy sauce, chicken broth, rice vinegar, sugar, sesame oil, Sriracha, water, black pepper, and cornstarch until smooth.
  5. Return chicken to the pan with vegetables and pour in the sauce. Cook for an additional 2-3 minutes until heated through.
