  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 1-1/2 teaspoons ground cinnamon, divided
  • 1 large apple, peeled and chopped
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 3/4 cups confectioners’ sugar
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F and grease an 8.5 x 4.5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a mixer, cream together butter, granulated sugar, and vanilla until light. Add eggs one at a time until fully mixed.
  4. Gradually add dry ingredients alternating with milk until just combined.
  5. In another bowl, mix chopped apples with brown sugar and cinnamon.
  6. Pour half the batter into the pan, layer with half the apple mixture; swirl gently. Repeat layers and sprinkle topping on top.
  7. Bake for 45-55 minutes or until a toothpick comes out clean.
  8. Cool in the pan before transferring to a rack; drizzle with glaze.
