Instructions

  3. Combine vegetable oil, eggs, vanilla extract, and cocoa mixture; mix until well combined. Fold in chocolate chips gently.
  4. Pour batter into prepared muffin tin cups about two-thirds full and bake for approximately 20 minutes or until a toothpick comes out clean. Cool completely before frosting.
  5. For the frosting: Beat softened butter until creamy, add powdered sugar gradually while mixing on low speed. Mix in vanilla extract, salt, heavy cream, and Oreo cookie crumbs until fluffy.
  6. Prepare ganache by heating heavy cream until simmering and pouring it over chocolate chips; stir until smooth.
  7. Frost cooled cupcakes generously with cookies and cream frosting; drizzle ganache topping and place halved Oreos on top.
