  • 4 strips bacon
  • 1/2 medium onion, chopped
  • 3 sticks celery, chopped
  • 2 medium carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups corn (fresh or frozen)
  • 2 large Russet potatoes, peeled and diced
  • Italian seasoning and cayenne pepper to taste

Instructions

  1. Cook bacon in a large pot over medium-high heat until crispy; remove and set aside.
  2. In the same pot, sauté onion, celery, and carrots in bacon fat until softened. Add garlic and cook for an additional 30 seconds.
  3. Stir in flour and cook for one minute before adding chicken broth; scrape any browned bits from the pot.
  4. Mix in heavy cream, corn, potatoes, Italian seasoning, cayenne pepper, and most of the bacon; bring to a boil.
  5. Reduce heat to simmer with lid slightly ajar for 15–20 minutes until potatoes are tender.
  6. Season with salt and pepper; serve garnished with remaining bacon.
