  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • ¼ cup plain flour
  • ½ cup chicken stock
  • 300 ml thick cream
  • 1 tbsp freshly minced garlic
  • ½ cup grated parmesan cheese

Instructions

  1. Prepare the chicken by seasoning it with salt, pepper, paprika, onion powder, and thyme. Coat each piece lightly in flour.
  2. Heat olive oil and butter in a large frying pan over medium-high heat. Cook the chicken for 5–6 minutes until golden and cooked through; flip halfway.
  3. Remove the chicken from the pan and set aside.
  4. In the same pan, add more butter and sauté minced garlic until fragrant (about 30 seconds).
  5. Pour in chicken stock and reduce for 1–2 minutes. Stir in cream and Dijon mustard; simmer until slightly thickened.
  6. Mix in parmesan cheese; return chicken to the pan to heat through for another 2–3 minutes.
  7. Serve with your choice of sides like rice or mashed potatoes.
