  • 1 carrot (diced)
  • 3 celery stalks (diced)
  • 3 garlic cloves (minced)
  • 12 oz chicken breast (cut into 1-inch pieces)
  • 6.5 cups chicken stock
  • 0.75 cup orzo
  • Juice of 1.5 lemons
  • 2 egg yolks
  • Fresh dill
  • Dried oregano

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrot, and celery until softened (5-7 minutes). Stir in garlic for an additional minute.
  2. Add chicken pieces; cook until lightly browned.
  3. Pour in chicken stock, add bay leaves and orzo; bring to a boil.
  4. Reduce heat and simmer for about 20 minutes until orzo is cooked through.
  5. Remove bay leaves; whisk lemon juice and egg yolks in a bowl. Slowly mix in hot soup to temper before returning it to the pot.
  6. Stir in fresh dill, oregano, salt, and pepper to taste before serving.
