  • 1 stick butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl or stand mixer, cream together softened butter, oil, granulated sugar, and powdered sugar until light and fluffy. Add egg and vanilla extract; mix until combined.
  3. Gradually add flour, salt, and baking powder; mix until just combined.
  4. Scoop out cookie balls onto the prepared baking sheet and flatten gently. Create space in the center of each cookie for filling.
  5. Bake for 8-9 minutes until set but soft in the center. Let cool before transferring to a wire rack.
