  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 cups panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 28 oz can crushed tomatoes
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons milk
  • 1/2 cup vegetable oil for frying
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh basil leaves, torn (about 1/4 cup)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Flatten chicken breasts to about ½ inch thick using a meat mallet.
  3. Set up a breading station: combine flour with garlic powder, Italian seasoning, salt, and pepper in one bowl; whisk eggs with milk in another; mix panko breadcrumbs and Parmesan in a third.
  4. Dredge each chicken breast in flour, dip in egg mixture, then coat with breadcrumb mixture.
  5. Heat vegetable oil in a skillet over medium heat and fry chicken for 4–5 minutes on each side until golden brown.
  6. In a separate pan, sauté onion and garlic, then add crushed tomatoes and seasonings. Simmer for flavor development.
