  • 1/2 pound ground beef
  • 4 tablespoons butter
  • 3/4 cup diced carrots
  • 3/4 cup diced celery
  • 3/4 cup diced onion
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 cups diced potatoes
  • 3 cups chicken broth
  • 1/4 cup all-purpose flour
  • 1 to 2 cups cubed Velveeta cheese
  • 1 1/2 cups whole milk
  • 3/4 teaspoon salt
  • Black pepper to taste
  • 1/4 cup sour cream

Instructions

  1. In a large pot, cook the ground beef over medium heat for about 6 to 8 minutes until browned. Drain excess fat and set aside.
  2. In the same pot, melt 1 tablespoon of butter and sauté carrots, celery, onions, basil, and parsley for approximately 10 minutes until tender.
  3. Stir in the diced potatoes, cooked beef, and chicken broth; bring to a boil then simmer covered for about 10 to 12 minutes until potatoes are soft.
  4. In a small pan, melt remaining butter and whisk in flour for about 3 to 5 minutes until bubbly; stir into soup mixture and boil for another two minutes.
  5. Reduce heat to low and add Velveeta cheese, milk, salt, and pepper; stir until cheese melts completely. Remove from heat and mix in sour cream before serving.
