  • 1 pound Lean Ground Beef
  • 7 Large Bell Peppers
  • 1½ Cup Cooked Brown Rice
  • 14.5 ounces Diced Tomatoes
  • 1 Medium Onion
  • 2-3 Garlic Cloves
  • 1 Cup Shredded Cheddar Jack Cheese
  • Olive Oil, Spices, Salt & Pepper

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, heat olive oil over medium heat and sauté diced onion until soft; add minced garlic and cook for an additional minute.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.
  4. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper; simmer for about 5 minutes.
  5. Stuff each bell pepper with the meat mixture and place them cut side up in a baking dish.
  6. Bake for 10–12 minutes until peppers are tender.
  7. Top with shredded cheese and bake for an additional 5–7 minutes until cheese is melted.
