  • 2 sweet potatoes
  • 1 lb. ground beef
  • ½ white onion, chopped
  • 2 garlic cloves, minced
  • 14.5 oz canned fire roasted diced tomatoes (not drained)
  • Olive oil
  • Taco spices (chili powder, cumin, paprika, garlic powder, onion powder, salt, black pepper)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking pan with parchment paper.
  2. Wash and dry the sweet potatoes. Poke holes in each with a fork, rub with olive oil, and season with salt and pepper. Bake for 40-45 minutes until tender.
  3. In a sauté pan over medium-high heat, cook onions and garlic in olive oil until softened. Add ground beef and spices; cook until browned. Stir in tomatoes and simmer for 5-7 minutes.
  4. Slice roasted sweet potatoes in half lengthwise and fluff the insides with a fork. Fill each half generously with the taco mixture.
  5. Top as desired with guacamole, cheese, pico de gallo, or sour cream.
