  • ½ tablespoon olive oil
  • ⅓ cup mayonnaise
  • ½ lemon (zested and juiced)
  • 2 teaspoons Dijon mustard
  • ½ small red onion (finely diced)
  • 3 large radishes (grated)
  • 2 stalks celery (small diced)
  • Fresh dill and chives

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. Drizzle salmon with olive oil, season with smoked paprika, salt, and pepper, then bake for 16 to 18 minutes until it flakes easily.
  3. Allow the salmon to cool before flaking it into chunks and chilling in the fridge.
  4. In a large bowl, combine flaked salmon with diced onion, grated radishes, celery, dill, and chives.
  5. In a separate bowl, mix mayonnaise, lemon zest and juice, Dijon mustard, minced garlic, salt, and pepper until smooth.
  6. Pour dressing over the salad mixture and stir gently to combine.
  7. Serve chilled on lettuce leaves or as a sandwich filling.
