  • 100 g caster sugar
  • 90 g demerara sugar
  • 1 teaspoon vanilla
  • 85 g chocolate chips

  2. Melt dark chocolate and butter in a heatproof bowl over simmering water; stir until smooth and add vanilla.
  3. In another bowl, whisk eggs with caster and demerara sugars until light and fluffy (about 5 minutes).
  4. Sift together flour, cocoa powder, baking powder, and salt; stir in chocolate chips.
  5. Fold the melted chocolate mixture into the whipped egg mixture gently.
  6. Carefully incorporate the dry ingredients until just combined.
