  • 1 pound gnocchi (store-bought or homemade)
  • 6 ounces guanciale or pancetta, diced
  • 2 large egg yolks
  • 2 large eggs
  • 1/2 cup grated Pecorino Romano cheese
  • 1/2 cup grated Parmigiano Reggiano cheese
  • Freshly ground black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, whisk together egg yolks, whole egg, Pecorino Romano, Parmigiano Reggiano, and black pepper. Set aside.
  2. Boil salted water in a large pot and cook gnocchi until they float, about 2-3 minutes.
  3. While boiling, heat olive oil in a skillet over medium heat. Cook guanciale or pancetta until crispy (5-7 minutes), then add minced garlic for another 30 seconds.
  4. Drain gnocchi (reserve some cooking water) and add them to the skillet with the cooked meat.
  5. Temper the egg mixture by whisking in reserved hot water gradually.
  6. Off heat, combine the tempered egg mixture with gnocchi in the skillet; stir until creamy. Adjust with reserved pasta water if needed.
  7. Serve immediately with fresh parsley and extra cheese.
