  • 8 oz dry macaroni noodles
  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper
  • ⅓ cup thinly sliced celery

  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Cook macaroni noodles in salted water until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled macaroni with gherkins, bell pepper, celery, red onion, and hard-boiled eggs.
  3. In a separate bowl, whisk together mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, and black pepper.
