Greek Lemon Rice is a vibrant and flavorful Mediterranean side dish that elevates any meal. This easy-to-make recipe features fluffy rice infused with zesty lemon, aromatic herbs, and a hint of garlic, creating a delightful combination that’s both refreshing and comforting.

Ingredients

  • 1 cup long-grain white rice (or basmati)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2¼ cups chicken or vegetable broth
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley and optional feta cheese for garnish

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Sauté the chopped onion until translucent (about 3–4 minutes).
  3. Add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Toast the rice in the pan for 1–2 minutes while stirring continuously.
  5. Pour in the broth, add oregano, salt, and pepper; stir well and bring to a boil.
  6. Reduce heat to low, cover the saucepan, and simmer for 15–18 minutes until the rice is tender and broth is absorbed.
  7. Remove from heat; stir in lemon juice, zest, and parsley (and dill if using).
  8. Fluff with a fork and serve warm garnished with feta cheese if desired.
