  • 300g uncooked orzo
  • 150g baby plum tomatoes
  • 100g feta cheese
  • 100g Kalamata olives
  • 75g cucumber
  • 1 small red onion
  • 1 clove garlic
  • Fresh parsley
  • Dried oregano
  • Extra virgin olive oil
  • Red wine vinegar
  • Salt
  • Black pepper
  • 1/2 lemon (juice only)

Instructions

  1. In a large mixing bowl, whisk together olive oil, red wine vinegar, parsley, oregano, salt, and pepper.
  2. Stir in chopped tomatoes, feta cheese, olives, diced onion, and garlic. Let marinate for at least an hour.
  3. Cook the orzo in salted boiling water until al dente. Drain and cool under cold water.
  4. Add cooled orzo to the salad mixture along with diced cucumber. Squeeze in lemon juice and adjust seasoning if needed.
