  • 100 grams honey (scant 1/3 cup)
  • 330 grams water (1 1/4 cups + 2 Tablespoons)
  • 90 grams rolled oats (1 cup), plus more for rolling
  • 500 grams bread flour (3 1/2 cups)
  • 12 grams salt (2 teaspoons)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the sourdough starter, honey, and water. Stir until combined.
  2. Add Dry Ingredients: Mix in rolled oats, bread flour, and salt until no dry flour remains.
  3. Knead the Dough: Transfer to a floured surface and knead gently for about 5-10 minutes until smooth.
  4. First Rise: Place dough in a greased bowl, cover, and let rise in a warm area for 4-6 hours or until doubled.
  5. Shape the Loaf: Deflate risen dough on a floured surface and shape into a round loaf; roll in additional oats if desired.
  6. Second Rise: Place shaped loaf in a proofing basket; cover and let rise for another 30-60 minutes.
  7. Preheat Oven: Preheat your oven to 450°F (230°C) with the Dutch oven inside.
  8. Bake the Bread: Transfer dough into hot Dutch oven, cover, and bake for 30 minutes; uncover and bake an additional 10 minutes until golden brown.
  9. Cool Before Slicing: Remove from the oven and cool on a wire rack before slicing.
