  • 1 tbsp Olive oil
  • 1 small Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 4 cups Chicken broth (reduced sodium)
  • 1/2 cup Heavy cream
  • 1 4-oz can Green chiles (diced; drained)
  • 8 oz Cream cheese (at room temperature, cut into small pieces)
  • 1 cup Mexican blend cheese (shredded)
  • 1 tsp Cumin
  • 1 tsp Dried oregano
  • 1/4 tsp Cayenne pepper (optional)
  • 1/2 tsp Sea salt (to taste)
  • 1/2 tsp Black pepper (to taste)
  • 4 cups Shredded chicken

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Add diced onion and sauté until soft (5–7 minutes). Stir in minced garlic and cook for another 1–2 minutes.
  2. Pour in chicken broth and heavy cream; add green chiles, cumin, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 40 minutes.
  3. Lower the heat and stir in cream cheese and shredded cheese until melted.
  4. Mix in shredded chicken and simmer for an additional 5 minutes until thickened.
