  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup chopped walnuts
  • 1 cup grated zucchini (wrung out)
  • 2 cups grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 3 large eggs
  • 1/2 cup avocado oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F. Line muffin tins with paper liners.
  2. In a large bowl, whisk together sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts. Stir in the grated zucchini and carrots.
  3. In another bowl, mix applesauce, maple syrup, eggs, avocado oil, and vanilla until smooth. Pour into the dry ingredients well.
  4. Gently fold the mixtures together just until combined.
  5. Fill muffin tins about three-fourths full with batter.
  6. Bake for 25–35 minutes or until a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for about 7 minutes before transferring to a wire rack.
