  • 1 cup canola or vegetable oil
  • 6 large eggs
  • 1 ½ cups whole milk
  • 1 ½ cups sugar
  • 1 tsp vanilla extract
  • 3 ¼ cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp cocoa powder
  • ½ cup semi-sweet chocolate chips (melted)
  • ½ tsp strawberry extract
  • ⅓ cup strawberry preserves
  • red or pink food coloring
  • 3 cups unsalted butter (softened)
  • 3 to 4 cups confectioner's sugar
  • 1 tsp strawberry extract
  • ¼ cup strawberry preserves
  • ½ cup semi-sweet chocolate melts or chips
  • ¼ cup cream
  • ½ cup strawberry jam (for filling)
  • fresh strawberries (for garnish)

Instructions

  1. Preheat oven to 350°F (177°C) and line three 8-inch pans with parchment paper.
  2. In a large bowl, whisk together eggs, oil, milk, vanilla, and sugar until well combined.
  3. In another bowl, sift together flour, baking powder, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  4. Divide batter into three portions; customize one with cocoa powder and melted chocolate for chocolate flavor, add strawberry preserves and extract for another portion.
  5. Pour each flavor into prepared pans and bake for about 30 minutes or until a toothpick comes out clean; cool on wire racks.
  6. For the buttercream, whip softened butter until fluffy; gradually add confectioner's sugar along with strawberry preserves and extracts.
  7. Assemble by layering chocolate on the bottom, followed by strawberry and vanilla; frost between layers and apply a crumb coat before chilling.
  8. Finish with chocolate ganache drizzled on top and fresh strawberries as garnish.
