  • 1 cup graham crackers (ground)
  • 1 tbsp sugar
  • 5 tbsp butter (melted)
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Caramel sauce (store-bought or homemade)
  • 6 oz semi-sweet chocolate (chopped)
  • 1/4 cup heavy cream

Instructions

  1. Prepare 12 baking cups or mini springform pans.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the cups and chill.
  3. Whisk cream cheese, powdered sugar, and vanilla until smooth. Gradually add heavy whipping cream until thickened.
  4. Spoon filling over crusts and chill.
  5. Melt chocolate with heavy cream to make ganache and spoon caramel sauce over each cheesecake.
  6. Top with chocolate ganache and garnish with pecans.
