  • 340 grams (12 ounces) orzo pasta
  • ¼ cup olive oil
  • ½ cup freshly squeezed orange juice
  • 3 mini cucumbers (finely diced)
  • 2 tomatoes (finely diced)
  • ½ bell pepper (finely diced)
  • ½ red onion (finely diced)
  • ½ cup fresh parsley (finely chopped)
  • ½ tablespoon dry oregano
  • Salt to taste
  • ¼ cup crumbled feta cheese
  • ¼ cup sliced olives (optional)

Instructions

  1. Boil the orzo pasta in salted water according to package directions until al dente.
  2. While the pasta cooks, chop cucumbers, tomatoes, bell pepper, red onion, and parsley.
  3. Drain the cooked orzo and let it cool completely.
  4. In a large bowl, combine the cooled orzo with olive oil, orange juice, all chopped vegetables, oregano, and salt. Mix well.
