  • 1 Tbsp. granulated sugar
  • 3/4 tsp. salt
  • 12 Tbsp. unsalted butter, cold
  • 4-5 Tbsp. ice cold water
  • 4 yellow peaches, ripe, sliced 1/2" thick
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 Tbsp. cornstarch
  • 1 tsp. kosher salt
  • 1 Tbsp. lemon zest (or just the zest from 1 lemon)
  • 1 tsp. lemon juice
  • 1 tsp. vanilla extract
  • 1 Tbsp. heavy cream
  • 1 large egg
  • coarse sugar (turbinado or demerara)
  • vanilla ice cream, for serving
  • 1 cup freeze dried raspberries
  • 1/4 cup granulated sugar
  • 1 3/4 cup heavy cream

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until pea-sized. Gradually add ice water until the dough forms.
  3. Chill the dough wrapped in plastic for at least one hour.
  4. Mix sliced peaches with sugars, cornstarch, lemon zest, juice, and vanilla in a bowl.
  5. Roll out chilled dough into a rough circle on floured surface and transfer to the baking sheet.
  6. Arrange peach filling in the center and fold edges over the fruit.
  7. Brush edges with egg wash and sprinkle coarse sugar on top.
  8. Bake for 30–35 minutes until golden brown.
