  • ¾ cup pecan halves (plus 1 ¾ cups chopped for topping)
  • 3 tablespoons light brown sugar
  • ½ cup melted butter
  • 24 ounces full-fat cream cheese (softened)
  • 1 cup sour cream
  • 1 cup sugar
  • 4 large eggs
  • 1 tablespoon all-purpose flour
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • ¾ cup heavy cream
  • ½ cup butter
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Combine graham crackers, whole pecans, and brown sugar in a food processor; pulse until fine crumbs form. Add melted butter and pulse to combine.
  3. Press crumb mixture into the bottom of the prepared dish; bake for 10 minutes until golden.
  4. In a clean food processor, blend softened cream cheese, sour cream, sugar, eggs, flour, vanilla, and salt until smooth.
  5. Pour filling over baked crust and bake for 30–40 minutes until edges are set but center is slightly jiggly.
  6. For the topping, heat chopped pecans, brown sugar, heavy cream, butter, cinnamon, and salt in a saucepan until boiling; cook for 2–3 minutes.
  7. Pour warm topping over cheesecake; cool in the refrigerator for at least two hours before serving.
