  • 1 cup uncooked quinoa
  • 1 can (15 ounces) chickpeas
  • 2 cups cherry tomatoes
  • 1½ cup cucumber
  • ¾ cup corn kernels
  • ¾ cup olives
  • ½ red onion
  • ⅓ cup parsley
  • 1 ripe avocado
  • ¾ cup feta cheese
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons mustard
  • 1½ tablespoons maple syrup
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Rinse quinoa and cook it in a pot with water and salt until absorbed (10-15 minutes). Fluff and set aside.
  2. Whisk together olive oil, lemon juice, mustard, maple syrup, salt, pepper, and oregano in a bowl. Add drained chickpeas and let marinate.
  3. In a large bowl, combine cherry tomatoes, cucumber, corn, olives, red onion, parsley, and avocado (if serving immediately).
  4. Mix cooked quinoa and marinated chickpeas into the vegetable mixture. Adjust seasoning to taste.
