  • 1 large yellow onion
  • 2 garlic cloves
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 tbsp olive oil
  • Spices: chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, cayenne pepper (optional)
  • 120ml vegetable broth
  • Toppings: Greek yogurt (or vegan alternative), diced avocados, fresh cilantro, lime wedges, salsa, pickled jalapeños (optional), shredded cheese (optional)

Instructions

  1. Preheat the oven to 200°C. Wash and cube the potatoes.
  2. In a bowl, combine potato cubes with olive oil and spices. Spread on a baking sheet and bake for 25–35 minutes until golden.
  3. Sauté onions in a pan with olive oil for about 3 minutes. Add garlic and peppers; cook until tender.
  4. Stir in remaining spices and vegetable broth; simmer until thickened.
  5. Prepare toppings separately to maintain freshness.
  6. Layer baked potatoes with sautéed vegetables in meal prep containers and store toppings separately.
