  • 1 lb large shrimp
  • 1-2 ripe avocados
  • 1 large ripe mango
  • 2 cups cooked rice or quinoa
  • 1/4 cup plain Greek yogurt
  • Lime juice and zest
  • Chili powder
  • Fresh cilantro
  • 1 tbsp mayonnaise (optional)
  • Salt and pepper to taste
  • 1/4 cup diced red onion
  • 1 small jalapeño (optional)
  • 1 tsp honey or agave

Instructions

  1. Prepare the mango salsa by combining diced mango, red onion, jalapeño (if using), lime juice, cilantro, and salt in a bowl. Chill in the fridge.
  2. Make the lime-chili sauce by whisking together Greek yogurt, mayonnaise (if using), chili powder, lime zest and juice, honey, salt, and pepper. Set aside.
  3. Season the shrimp with chili powder, garlic powder, salt, and pepper. Cook in a hot grill pan with olive oil for about 2–3 minutes per side until pink and charred.
  4. Assemble the bowls with a base of rice or quinoa topped with grilled shrimp, avocado slices, and mango salsa.
  5. Drizzle generously with lime-chili sauce and garnish with cilantro.
