Ingredients

  • Extra virgin olive oil
  • Garlic (minced)
  • Brown onion (finely chopped)
  • Fresh thyme and rosemary
  • Bay leaf
  • Tomato passata
  • Canned cannellini beans
  • Vegetable stock
  • Fresh parsley leaves
  • Whole hazelnuts (or almonds)
  • Cooking salt

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté minced garlic and chopped onion until golden brown (about 8 minutes).
  2. Add tomato passata and cook on low heat for an additional 8 minutes until thickened.
  3. Stir in cannellini beans and vegetable stock. Simmer uncovered for 15 minutes.
  4. Blend approximately 2/3 cup of the soup until smooth, then stir back into the pot to thicken.
  5. Mix in Picada just before serving, adjusting salt to taste.
  6. Serve hot, garnished with extra Picada if desired.
