  • 1 cup white onion slices
  • 1 tablespoon chopped fresh garlic
  • ½ red jalapeño pepper
  • 3 slices fresh galangal (or ginger)
  • 1 stalk lemongrass
  • 10 lime leaves (optional)
  • 1 tablespoon red Thai curry paste
  • 4 cups chicken broth
  • 2 cans full-fat coconut milk
  • 1 pound chicken breasts
  • 8 ounces white mushrooms
  • Brown sugar, fish sauce, fresh lime juice

Instructions

  1. In a slow cooker, combine onion, garlic, jalapeño, galangal, lemongrass, lime leaves, curry paste, and chicken broth. Stir well.
  2. Cover and cook on HIGH for 3 hours or LOW for 6 hours.
  3. Remove solids with a slotted spoon leaving only the broth.
  4. Add coconut milk, chicken, and mushrooms; stir to combine.
  5. Cook on HIGH for another hour or LOW for 2 hours until chicken is cooked through.
  6. Stir in brown sugar, fish sauce, and lime juice; adjust seasoning to taste.
  7. Serve hot garnished with green onions and cilantro.
