1 (15 oz) can chickpeas (drained and patted dry)
¼ cup sundried tomatoes (chopped)
1 tsp smoked paprika
4 large eggs
Salt and pepper (to taste)
Instructions
In a non-stick skillet over medium heat, add the drained chickpeas, chopped sundried tomatoes, and smoked paprika. Cook for 5-7 minutes until the chickpeas are slightly crispy.
Reduce heat to medium-low and remove half of the chickpeas to create two holes in the remaining mixture. Drizzle oil from the sundried tomato jar into each hole.
Crack one egg into each hole and cook for 3-5 minutes while basting with oil until the whites are set but yolks remain runny. Season with salt and pepper before serving.
