  • 1/3 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 and 1/2 tablespoons cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla extract; mix until well combined.
  3. In another bowl, whisk together flour, baking soda, salt, and cream of tartar. Gradually incorporate into the wet mixture until just combined.
  4. Shape dough into balls about 1.5 to 2 inches wide and roll in the cinnamon-sugar mixture.
  5. Place on prepared baking sheets with space in between. Bake for 9 to 11 minutes until edges are set but centers remain soft.
  6. Let cool briefly before transferring to wire racks.
