  • 1/2 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease mini loaf pans or one large loaf pan.
  2. In a bowl, combine diced peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract until mixed well.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
  4. Pour the batter into prepared pans and bake: mini loaves for 25–30 minutes; large loaf for 50–55 minutes. Check doneness with a toothpick.
  5. Cool slightly before slicing and serve warm.
