3 tbsp toasted sesame oil
4 cups chicken broth (or vegetable)
1 can (14 oz) unsweetened coconut milk
1 tbsp lime juice
3.5 oz shiitake mushrooms
4 garlic cloves
1 tbsp grated ginger
½ tsp ground turmeric
½ tsp brown sugar
2 tbsp Thai red curry paste
9 oz instant ramen noodles
1 tbsp fish sauce
1 tbsp sambal oelek (optional)
Chili oil (for serving)
Sesame seeds (for serving)
Chopped chives (for serving)
4 boiled eggs (cooked for 7 minutes)
Instructions
Prep ingredients: Grate garlic and ginger, tear shiitakes into small pieces.
Cook shiitakes: In a large pot, heat 1 tbsp sesame oil over medium heat. Add shiitakes, season with salt and pepper, and cook until crispy. Remove from pot.
Create broth: Reduce heat to low, add remaining sesame oil, garlic, and ginger; cook until fragrant. Deglaze with broth and bring to a boil.
Add flavors: Stir in turmeric, brown sugar, soy sauce, fish sauce, curry paste, sambal oelek, coconut milk, and lime juice.
Cook ramen: When boiling again, add ramen noodles and cook for 2 minutes (or separately if not serving immediately).
Serve: Top with crispy shiitakes, sesame seeds, chives, chili oil drizzle, and boiled eggs.
