  • 2 cans (28oz) cannellini or white beans, drained
  • 1 medium onion, diced
  • 1 celery stalk, diced
  • 1 large carrot, diced
  • 1-2 garlic cloves, minced
  • 1 cup frozen spinach (optional)
  • 2 medium potatoes, peeled and cubed
  • 1 Tbsp olive oil
  • 1 Tbsp tomato paste
  • 1/3 cup white wine
  • 1 sprig rosemary (or equivalent dried)
  • 2 cups vegetable broth or hot water
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery; sauté until softened (about 5 minutes).
  2. Stir in garlic, beans, tomato paste, potatoes, rosemary, and paprika if using; cook for about 1 minute.
  3. Add white wine and simmer until evaporated.
  4. Mix in frozen spinach and vegetable broth; season with salt and pepper. Bring to a boil then cover and reduce heat for about 15 minutes.
  5. Once cooked, check potato tenderness. Remove from heat and discard rosemary sprig. Adjust seasoning as needed.
