  • 1 cup heavy whipping cream

  • 1.5 pounds Yukon Gold potatoes, diced

  • 5-6 cups chicken stock
  • Salt and pepper to taste
  • 6 pieces cooked bacon, crumbled

Instructions

  1. In a large stockpot over medium-high heat, cook the ground Italian sausage until browned. Transfer to a plate, reserving some grease in the pot.
  2. Sauté diced onions in the reserved grease for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in diced potatoes and chicken stock along with the cooked sausage. Bring to a simmer and cook until potatoes are tender (about 10 minutes).
  4. Mix in chopped kale and heavy cream; simmer for another 5 minutes. Season with salt and pepper to taste.
